Roots was born from a belief that the most honest food tells the story of where it comes from. The Casa Kaos team — shaped by years across Spain, Mexico, Italy, Portugal, and Peru — found their truest expression on the shores of Siargao.

Every dish begins with a question: what is this island offering today? The answer guides the kitchen. The result is a meal that could only happen here, on this evening, in this place.
